Ingredients

gourd (squash of some kind, preferrably of old world origin)
black pepper
lovage (strong celery leaves)
cumin
oregano
onion
wine
liquamen (fish sauce)
oil
starch as a thickener

Directions

Fry the goard (or saute in oil?). Make a sauce for it witht the rest of the ingredients, using starch to thicken the sauce. I would probably start by simmering the wine a bit, adding the rest of the ingredients. Possibly making a roux with the oil and starch first before pouring in the wine.
